Finca El Paraiso is a legendary Colombian coffee farm that specializes in unique coffee processing techniques, often using a variety of fermentation techniques to create a truly unique cup.
Pink Bourbon is a genetic jewel derived from spontaneous mutations of traditional Bourbon, renowned for its balance, juicy acidity, and fruity complexity. Cultivated in Finca el Paraíso under conditions of high humidity and volcanic terroir, it develops a vibrant, floral, and fruity cup, with a natural sweetness that makes it ideal for both filter coffee and light espresso.
Following immediate depulping, a controlled anaerobic fermentation of 24 to 36 hours takes place in sealed tanks, with the inoculation of Lactobacillus to intensify the smoothness and sweet notes. A double thermal wash, starting with immersion in hot water at 48°C and culminating in a cold water shock at 4°C, seals the delicate aromatic compounds.

Not much more can be said about the amazing work Finca El Paraiso has been doing for many years now. They are based in the Cauca region of Colombia and have been producing delicious coffees with a wide range of flavor profiles. Finca El Paraiso is known for their heavily science-based approach to coffee. From inventing techniques like Thermal Shock (a technique that is now commonplace in the coffee industry) to their yeast-based fermentation, they are at the forefront of what coffee can be. What impresses me the most is that, despite all these experimental processes, I find the coffee to be incredibly consistent in quality.
