Finca El Paraiso is a legendary Colombian coffee farm that specializes in unique coffee processing techniques, often using a variety of fermentation techniques to create a truly unique cup. This particular coffee undergoes two fermentation processes. The first fermentation is done with the coffee still in the cherry, transferred to a cherry fermentation tank and anaerobically fermented for 72 hours submerged in water. The coffee is then pulped and demucilaginated before undergoing a second fermentation step in which the culture medium is introduced. This second fermentation takes place for 36 hours. The result is a complex yet delicate cup giving notes of Lychee, Pear, and Starfruit with a floral aroma and tea-like body.

Not much more can be said about the amazing work Finca El Paraiso has been doing for many years now. They are based in the Cauca region of Colombia and have been producing delicious coffees with a wide range of flavor profiles. Finca El Paraiso is known for their heavily science-based approach to coffee. From inventing techniques like Thermal Shock (a technique that is now commonplace in the coffee industry) to their yeast-based fermentation, they are at the forefront of what coffee can be. What impresses me the most is that, despite all these experimental processes, I find the coffee to be incredibly consistent in quality.
